Sono piuttosto puntigliosa nell’arte di evitare gli sprechi, ma anche parecchio creativa e così, un giorno che avevo:
– 1 limone privato della buccia (usata nella crostata)
– 1 finocchio superstite dell’orto (*)
– del triste pollo a fettine (**)
è venuta fuori questa padellata di pollo e finocchi al limone e origano, che ormai faccio spessissimo perché è risultata parecchio sfiziosa. Commento del marito dopo il primo assaggio: “non lo avrei mai pensato così buono!”.
Si prende il finocchio, lo si taglia a pezzi grossi e, dopo averlo ben lavato, si fa a fettine non troppo sottili. Si mette quindi nel wok (o in padella) a saltare a fuoco vivace con poco olio, un generoso pizzico di origano e sale, tenendo coperto.
Quando il finocchio è a metà cottura si unisce il succo del limone, il pollo tagliato a striscioline, poco altro sale e si lascia cuocere sempre a fuoco altino, ma con il coperchio leggermente scostato dal wok, rimestando ogni tanto.
Il pollo cuoce in pochi minuti e il sughino si restringe, consentendo comunque di osare una goduriosissima scarpetta.
Il limone si sposa benissimo sia con l’origano che con il finocchio, infatti spesso preparo i soli finocchi con questo procedimento ottenendo un contorno saporito e profumato. Una vera sorpresa!
(*) Quest’anno, pur avendo piantato tantissimi finocchi, ne abbiamo mangiati davvero pochi: le piogge abbondanti hanno rovinato una buona parte del raccolto. Non soltanto i finocchi, ma anche i radicchi, le verze, i crauti… per non parlare dei porri che adesso raccoglierò per disperazione, ma di 36 che erano all’inizio… forse forse ne riusciremo a mangiare 5 🙁
